Tilapia filet (I use frozen filets from Sam's Club or Smith's)
Melt about 1 Tbsp of butter in your frying pan.
Once the butter is melted, put in your tilapia. Cook at just above medium heat.
Pour 2-3 Tbsps of lemon juice over the tilapia.
Sprinkle lemon pepper on the tilapia, flip it, sprinkle again.
Once your tilapia is done, set it aside and put 1-2 Tbsps of butter into your pan.
Add 1-2 Tbsp of lemon juice. (More or less depending on how buttery/lemony you like your sauce.)
Once the butter is all melted you can pour your sauce over the tilapia.
If you're like me it'll probably be swimming.
Ha. Swimming tilapia.
It's super simple and super delicious. And, you get all those Omega 3s you need.
Now I sound like my mom...
Edit: My sister (who taught me this recipe) says:
Actually, I've started doing it a little bit differently so the tilapia isn't just all squishy. I put in just a little bit of butter (maybe like.. half to 2/3 of a Tbsp), and let it most cook in it's own juices. When it looks like it's running out of butter/juice to cook in, I add little bits at a time. And maybe a little bit of lemon juice too. But that way, you get little slightly crispy parts on the edges, and caramalized buttery stuff all over it.. And it's SO good.
